Description
This chocolate is called dark milk because it contains more than 50% cocoa and therefore less sugar and less milk powder than a classic milk chocolate. The aromatic notes are cocoa complemented by the sweet ones of dried cranberry and trappist beer and by a persistence in the mouth of cocoa and honey flavors.
Walana cocoa comes from Waslala in the Matagalpa region in northern Nicaragua. The area is unique in the country with a rainy season of almost 9 months, which makes it suitable for growing cocoa. It is also home to a flora and fauna of great wealth.
For more than 20 years, the “La Campesina” cooperative, made up of families of cocoa producers, has developed the establishment of cocoa cultivation which today reaches more than 1,500 hectares.
