Blond chocolate is the cousin of white chocolate, at least in terms of its ingredients: natural cocoa butter from Central America, sugar and milk powder. The big difference is that the milk powder is roasted, which gives the the chocolate its beautiful golden colour and, once in the mouth a creamy blend of biscuity notes and caramelised milk. This milky caramel flavour is much sweeter and more pleasant than caramel made from sugar. Inclusions of buckwheat and almonds add a welcome hint of dried fruit. Like they are each on a single tablet, you can combine them as you wish … or not.
