Description
Walana cocoa beans give off aromatic, woody, smoky and nutty notes as well as honey, caramelized almonds, ripe fruit and cinnamon. These flavors pair wonderfully with milk in a balance of 45% cocoa and 55% milk and sugar.
Like El guabo, Walana cocoa comes from Waslala in the Matagalpa region in northern Nicaragua. The area is unique in the country with a rainy season of almost 9 months, which makes it suitable for growing cocoa. It is also home to a flora and fauna of great wealth.
For more than 20 years, the “La Campesina” cooperative, made up of families of cocoa producers, has developed the establishment of cocoa cultivation which today reaches more than 1,500 hectares. It thus fights the effects of deforestation and allows small producers to stay on their land.
